I have a hypothesis, I see you're using a function to redraw the canvas using setInterval, and in principle I see what you were thinking, however I suspect the canvas widget has a limit on how fast it can be redrawn.

An alternative might be to count how many times a scene has been redrawn and only move the snake once the count has been reached.

For example:

Let's assume 60fps and the snake initially updates once per second until the first block is eaten, the update function updates a second counter each update and when the second counter reaches the value of the first then everything is shifted, once a block is eaten then the first counter is decremented by 1.

Does this make sense?
