You hold and drag like a gesture. If you've let go and haven't dragged enough to select anything, you've cancelled.
If you want a desktop-style right click menu, then things are so simplified you don't even need a plugin. You can just show a HTML <ul> list when you tap/cxttap a node.

You may want to follow this:
Allow opening menu on tap or hold #2
I'm not sure about the value of this option, but it the ticket will track experimentation with it etc.
