Provide pre-built binaries for Windows and Macs with M1 chips about conduit HOT 2 CLOSED

I've added this issue to v0.1.0 so we keep it on our radar, and can discuss it before we go public.

Here we had two options:

1. Continue configuring the build process to provide builds for all platforms
2. Replace the Kafka client with something which doesn't a CGo dependency, so we don't have this problem in the first place.

After another attempt at option 1. and only little progress made, it's more or less clear that even if option 1 is doable, it will take significant time and will make the build process more complex. Advantages of the current client (Confluent) cannot cover that, so we will go with option 2 and use Segment's client.

Once we are done with #52, we will need small adjustments to the build process and we can close this issue.
