I seem to remember there being a Mythbusters thing about shooting off locks...

The short version is that you're not going to pull it off with a handgun - you need a shotgun or rifle.

So maybe it just takes a certain amount of damage?

One shot with a rifle or shotgun, a couple with a handgun.

Oh yea, I definitely wasn't contemplating automatic success, even with
extremely good skills. It'd be something like
one_in(weapon_damage/damage_threshold) (assuming we already have a hit)
shotguns though, yea they'd just take enough lock mechanism out with one
shot.

shotguns should be much more effective than rifles, and rifles about the same effectiveness as handguns. the problem is that the lock itself is not something you can disable with a bullet, generally. what you're trying to do is damage the wood/plastic/metal around the lock enough that the lock doesn't keep the door closed any more.
