I'd vote for not offering these settings in the GUI itself but to make them accessible through other means instead. This could be dconf or a configuration file.

I would be okay with that decision (conf or .dat file instead of GUI). If it gains popularity in use, it could always be moved into the UI.

I think I can close this. You can have a trusted peer (I think you have to edit the keys.dat manually for this though), and you can change the difficulty settings in the GUI. Complain if you still need work done on this.
