By default, the auditing handler considers an entity instance newly created if it has id null.
Nonetheless you can customize this logic, by making your entity implement org.springframework.data.domain.Persistable and overriding org.springframework.data.domain.Persistable#isNew(), which should return whether the entity instance is new or was persisted already.

For example in your code you might want to consider it new if created == null:

@Document
public class Person implements Persistable<String> {

        @Id
        private String id;
        private String name;

        @CreatedDate
        private Instant created;

        @LastModifiedDate
        private Instant modified;

        @Override
        public String getId() {
            return id;
        }

        @Override
        public boolean isNew() {
            return created == null;
        }

        // ...
}
